1 cup warm milk
3 tablespoons brown sugar
1 sachet active dry yeast
1 1/2 cups white wheat flour
1 1/2 cups whole wheat flour
3 tablespoons wheat bran
3 tablespoons flaxseed
3 tablespoons olive oil or, preferably, sunflower oil
1 egg
1/2 teaspoon salt
1 egg yolk for brushing on top
Sesame seeds, seeds, or oregano for decoration
Step by step
Mix the flours, wheat bran, flaxseed, and salt in a bowl.
Mix the warm milk with sugar and yeast in another bowl.
Combine the two mixtures and stir well. Add the egg and olive oil, and mix until a homogeneous dough is obtained.
Wash your hands and grease them with a little oil. Knead briefly until the dough is smooth and even.
Form a disk with your hands and roll up the dough like a roulade.
In a loaf pan or bread pan, line with parchment paper and grease with a little olive oil. Add the rolled dough to the pan, brush with the egg yolk mixed with a little water, add sesame seeds and oregano on top to taste, and let it rise in the sun until it doubles in size.
Bake in a medium oven for 30 minutes.
